Hash browns are a classic potato breakfast recipe to order at a diner. But they’re so easy to make at home, especially with an air fryer.
Not to mention, by making hash browns in an air fryer, you can reduce the amount of oil for healthier fried potatoes without sacrificing any crisp, golden texture or flavor.
About Air Fryer Hash Browns
This recipe gets plenty of flavor from dried herbs and incredible texture from an air fryer. Whether you make loose crispy potato hash browns or individual patties, you can’t go wrong with this quick, easy and delicious way to make hash browns from scratch.
Air Fryer Hash Brown Recipe Ingredients
- Russet potatoes. These are the best potatoes for frying because of their texture. After rinsing off some of the excess starch and drying your grated potatoes well, russets cook up perfectly crisp and golden.
- Seasonings. I love adding garlic powder, onion powder, and salt at the very least. For my loose hash brown recipe, I also add a hit of paprika for spice. You can have fun experimenting with your favorite seasonings to make these hash browns your own.
- All-purpose flour. This is key to making hash brown patties that hold together well in the air fryer.
- Egg. This will bind your patties together for firm and flavorful hash browns every time.
- Oil. You only need a tiny bit to make air fryer hash browns that look, taste, and have the texture of deep-fried potatoes, with a fraction of the calories and fat from oil.
- Hot sauce and ranch dip. These are my favorite sauces to drizzle and dip my hash brown in, but you can serve your breakfast treat with whatever you like!
Cook Time
Air fryer hash brown patties take 10 to 12 minutes in a 350°F air fryer. Flip the patties after 5 minutes.
Loose hash browns cook in 9-10 minutes in a 360°F air fryer. Stir the potatoes every three minutes with a fork for even browning.
How to Make Air Fryer Hash Browns
This is an incredibly easy recipe, whether you make patties or loose potato hash. The most important step is to properly prepare the potatoes to ensure crispness.
To prepare potatoes for the crispiest hash brown, start by washing and peeling them.
- Next, grate the potatoes using the largest side of a box grater into a large bowl.
- Cover the potatoes with cold water and let them sit for about 30 minutes. After soaking, drain and rinse the potatoes until the water runs clear.
- Using cheesecloth or kitchen towel, squeeze as much water out of the potatoes as possible.
At this point, you will have removed a lot of the starch clinging to the outside of your russet potatoes. Now you’re ready to get cooking.
If you’re making patties, mix the grated, dried potatoes with seasonings, flour, egg, oil, salt, and pepper. Shape the mixture into patties about 2.5-inches in diameter and place them in the air fryer. Flip after 5 minutes, and after about 10 minutes you should have perfectly cooked air fryer hash brown patties.
If you’d rather have loose potato hash, simply toss the prepared grated potatoes with seasonings and a bit of oil. Place them directly into the air fryer and cook for 9 to 10 minutes. Give the hash a stir every 3 minutes or so for even cooking.

- Parchment paper, which you can perforate yourself simply by poking holes in the paper with a toothpick or skewer. This allows for even heat distribution during air frying.
Storage and Leftovers
These are best enjoyed hot out of the fryer basket. But if you end up with leftovers, store them in an airtight container in the fridge for up to three days. You can reheat them in a 350°F air fryer for 2-3 minutes per side.
For longer storage, freeze hash browns for up to three months. You can reheat frozen hash browns in a 350°F air fryer for 9-10 minutes, or until golden and crisp.
Variations
Feel free to mix and match the seasonings in your homemade hash browns. You can add spice with chili powder or cayenne. Or, use dried herbs or a seasoning blend to put your own spin on this healthy breakfast recipe.
Serving Suggestions
I love dunking my hash brown patties fresh out of the air fryer into homemade ranch dip. I also add a drizzle of hot sauce for a kick. My creamy jalapeño sauce is also a crowd-pleasing pairing with crispy potatoes.

- 2 large russet potatoes
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon all-purpose flour
- 1 large egg room temperature
- 1 teaspoon oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
For loose hash browns
- 2 large russet potatoes
- ½ teaspoon garlic powder
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
- 1 teaspoon oil
Serving
- ¼ cup hot sauce
- ¼ cup ranch dip
Instructions
- Wash the potatoes thoroughly, dry and peel. Grate the potatoes using the largest side of a box grater into a large bowl.
- Cover the grated potatoes in cold water for about 30 minutes. After soaking, drain and rinse the potatoes until the water runs clear.
- Using cheesecloth or kitchen towel, squeeze as much water out of the potatoes as possible.
- For Hash Brown Patties: Place the potatoes in a medium bowl. Add the garlic powder, onion powder, all-purpose flour, egg, oil, salt, and black pepper and mix well.
- Line the air fryer tray with perforated parchment paper*. Shape the potato mixture into 2½-inch patties and place on the parchment paper. Air-fry at 360°F for 12 minutes, flipping halfway through. Cook until the edges are golden brown. Serve hot.
- For Loose Hash Browns: place the grated, dried potatoes into a medium bowl and toss with the garlic powder, onion powder, paprika, salt and oil to thoroughly combine.
- Line the air fryer tray with perforated parchment pape*r. Transfer the potato mixture to the air fryer and cook at 360°F for 9-10 minutes, flipping every 3 minutes with a fork. Cook until the potatoes are crisp and golden brown. Serve hot.
