Cilantro-Lime Brown Rice

Ingredients
- 2 cups chicken broth
- 1 cup brown rice
- 1 tbsp olive oil
- 1 tsp salt
- Juice from 1/2 lime or about 1 tbsp
- 1 tsp white sugar optional
- ¼ cup chopped cilantro
Instructions
- Combine rice, chicken broth, olive oil, and salt in a medium sized pot. Bring to a boil.
- Cover with a lid, reduce heat to low and cook until rice is tender, about 45 minutes.
- When rice is done cooking, stir in lime juice, sugar, and cilantro.
- Fluff rice and serve.
