Chipotle Lime Honey Vinaigrette

During the past week we’ve celebrated a high school graduation, bought season passes to the water park, and fired up the grill at least three times. I guess you could say summer is underway! I love the tastes of summer, especially tangy citrus flavors like lime and lemon. I developed this recipe for Chipotle Lime Honey Vinaigrette to go with my Chipotle Lime Chicken Kabobs, but it goes great with any kind of salad, grilled fish or shrimp.

There are so many flavor directions you can go with a basic vinaigrette, but this combination of chipotle, lime and honey is one of my favorites. This dressing is tart, sweet and spicy without being overpowering. It’s fresher and less expensive than bottled dressing.Making this dressing is super easy. Combine lime juice, lime zest, honey, canola oil, chipotle chile powder, salt, dried herbs, spices and a splash of red wine vinegar in the jar of a blender. Blend for about one minute until the dressing is well emulsified. It’s that simple. 

For years, I used a box grater to zest lemons and limes, but recently I upgraded to an Oliver & Kline Professional Micro Grater & Zester, which works a lot better. It’s much easier to use than the box grater for zesting citrus, and I also love it for grating hard cheeses like Parmesan.

Chipotle Lime Honey Vinaigrette pairs well with romaine, butter lettuce, cucumbers, radishes, bell peppers, tomatoes and tons of other vegetables. Have fun creating an endless variety of salads, and here’s to a tasty summer!

Ingredients

• ¼ cup lime juice
• 1 teaspoon lime zest
• 3 tablespoons honey
• ½ cup canola oil
• 1 teaspoon chipotle chili powder
• ¼ teaspoon garlic powder
• ¼ teaspoon onion powder
• ½ teaspoon dried oregano preferably Mexican
• ½ teaspoon salt
• ¼ Tapatio hot sauce or your favorite hot sauce

Instructions

 

• All all ingredients to the jar of a blender and blend at medium speed for about a minute until well emulsified.
• Serve with salad, grilled chicken, grilled fish or shrimp.
